   Go to your control panel and click on "categories" - you then can make any category you want for your blog.

   Do what Jeffrey said and then when you create a post at the bottom you'll see checkboxes so you can assign the post to a specific category. That way you can click on any of the Category links on the right and it will just show you posts that you've selected to be part of that particular category.

   sorry for the additional comment: when you get to categories, erase the "new Category Here" and place whatever name you want. Then when you post in the future at the bottom before you submit, it will let you choose which category you want to place it in.
